Enchiladas – Roberta Richey

1 lb. hamburger

Salt and pepper to taste

1 large can of refried beans

1 medium onion

1 pkg. of taco seasoning

 

Brown hamburger and onion, add salt and pepper to taste and add taco package. Add the refried beans and about ½ cup of water to make it kind of soupy. Let simmer 5-7 minutes.

Use either corn or flour tortilla and fill with this mixture, cheese,sour cream, olives, (whatever you like). Roll and put inot 13X9 pan. Cover with enchilada sauce. Bake at 400 degrees for 15 minutes or until the cheese is melted.

 

Enchilada Sauce

 

Melt 4 T. butter and add 3 T. flour. Mix and brown a little as you would for gravy, then add 2 ½ cups hot water, 1-8 oz. can of tomato sauce, ½ tsp. onion salt, ¼ tsp. garlic powder, ¼ tsp. black pepper, ½ tsp. salt and 3 T. chili powder.

Mix well and stir until thickened. You can add a little more water if you want a little thinner sauce. Pour over the enchiladas and top with cheese.
