Orca Point Salmon -Valerie Goodrich

1 fresh Alaska salmon filet

1/2 c butter (1 stick)

1/2 c brown sugar

1/4 c soy sauce

1 Tbls lemon juice

Melt butter in a small sauce pan over low heat.  Add brown sugar, soy sauce, and lemon juice. Mix together and then set aside to cool.  Rinse the salmon filet with fresh water and pat dry.  Cut the filet into serving size pieces.  Place fish (skin side down) in a shallow glass dish.  Pour the cooled marinade mixture over the filets and make sure they are well coated.  Cover and marinate for 30 minutes.  Pre-heat the oven to 350 degrees and uncover the pan.  Bake the fish for 30 minutes or until it just begins to flake.  Coat the fish with the marinade every 5 or 10 minutes.  For the last 10 minutes of baking, dump out the majority of the marinade so that it forms a nice crispy glaze over the fish.
