Pasta Salad – Nycola Anderson

1 pkg. small curly tri color pasta

Tomato-chopped

Red onion finely sliced

Feta cheese (to taste) crumble it into small pieces

Mix together in large bowl and add dressing.

Grated carrots

Green or yellow pepper-chopped

Black Olives (may cut in half)

Dressing:

4 T. sugar

5 T. white wine vinegar

2 t. salt

½ c. oil

juice of one lemon

Mix together and add finely chopped fresh basil and some minced garlic (these two to taste). I use about ½ c. chopped basil and a clove or two of finely chopped minced garlic. Add dressing to pasta mixture and let stand several hours overnight. If you let stand overnight add a bit more dressing before serving.
