Pittsburgh Sweet Potatoe Pie –Cindy Leishman

3-4 sweet potatoes or yams, peeled, chopped and boiled until soft.

Drain and put in bowl.

Add 1 c. sugar

1 t. vanilla

2 eggs

Pour into unbaked pie crust

Bake 350  for 30-40 minutes
