Chunky Apple Pancakes – Cindy Leishman

2 medium apples, cut in small pieces

1 c. flour

2 tsp. baking powder

1 tsp. salt

¼ c. sugar

1 egg

1/3 c. milk ( a little more if batter is too thick)

2 tsp. oil

 

Mix dry ingredients. Beat egg, milk, and oil and pour over dry ingredients. Stir until smooth, then add apple pieces. Cook on greased griddle. Serve with Cinnamon Butter. Makes 6 large pancakes. I usually double the recipe!

Cinnamon Butter –Beat together:

½ c. butter or margarine

¼ c. powdered sugar

½ tsp. cinnamon
